Cuban Inspired Breakfast

If there was one thing I simply couldn't get enough of while visiting Cuba, it was their black beans. At every meal we went to, I immediately scoured the menu/buffet for black beans. Upon returning home, I knew that black beans needed to be added to my diet, so I searched online for a recipe that seemed as close to Cuba as possible, and I spent a Friday evening trying my hand at this recipe. The beans came out like perfection, and for breakfast the following day, I enjoyed Cuban black beans with fried eggs on top and a yummy ripe mango.

  1. Drooling over here as always when you post pictures of food. Will make this as soon as I get home. Black beans are tough to find in the UK sadly.
