Winner Winner, Chicken Dinner

One of my latest hobbies, if you can call it a hobby, is picking up a whole chicken on Sunday, and roasting it for dinner. It's such a relaxing task, the entire house smells amazing, I have a delicious home cooked meal to wind down the weekend, AND I have leftovers for nearly a weeks worth of packed lunches! I'm not sure if there is anything I love more than cooking things that can be made into delicious and diverse leftovers. With chicken, I have already made chicken salad, chicken broth, chicken fried rice, and BBQ chicken pizza. I am on a roll, ya'll.

Confession: I did not know how to roast a chicken until last month. And since I taught myself, I have made three chickens. Obsessed, right? The recipe I've been working with was sent to me by a college friend, Audrey, and she swears by it. It's from Cook's Illustrated, and though there are some fancy tricks (which I haven't followed...) the recipe is easy and the result is magnificent - finger lickin' good. The meat is juicy, the skin is crispy, and there are even instructions for whipping up a quick gravy with the drippings! YUM.
And as a special treat to myself, I decided to whip up a batch of herb butter. Basil, thyme, rosemary, and a dash of honey whipped into Icelandic buttery perfection. I even rubbed my chicken skin with this mixture. The moral of today's story is that you should not love butter as much as I do. It's unhealthy.
